
Autumn Tortellini Bake: Pumpkin, Mushrooms and Mozzarella
Discover the taste of autumn with our delicious tortellini bake! Sweet Hokkaido pumpkin, savoury mushrooms and creamy mozzarella melt together into an irresistible dish. Perfect for cosy evenings!
Method
- Cut the pumpkin into small cubes.
- Season the pumpkin with salt, pepper and chilli.
- Toss the cubes with a little Ölich Olive Oil.
- Spread the pumpkin on a baking tray and roast in a preheated oven at 200°C for 20–25 minutes.
- While the pumpkin is in the oven, prepare the tortellini.
- Slice the mushrooms.
- Finely chop the onion and garlic.
- Take the pumpkin out of the oven and put it into a baking dish.
- Add the chopped tomatoes, onion, garlic, half of the mozzarella, the tortellini and the mushrooms.
- Mix everything together well.
- Sprinkle the cornflour over the top.
- Top with the rest of the mozzarella.
- Bake for another 15–20 minutes, until the cheese is golden brown.
- Just before serving, chop some fresh sage and fry it in a little Ölich Olive Oil.
- Scatter the fried sage over the dish.
- Serve the tortellini bake hot.
You can also add other vegetables, such as courgette or peppers, for even more variety.
