
Fresh Rocket Salad with Oranges and Parmesan
Forget dull winter food! This fresh rocket salad with oranges and Parmesan comes together in minutes and makes a light meal. Slightly bitter rocket, sweet oranges and savoury Parmesan bring freshness, sweetness and depth to one plate. It is quick and simple to make and works as a side to a hearty main course or as a light lunch on its own. Give it a try and let this winter classic win you over.
Method
- Wash the rocket and spin it dry. Wet leaves won't hold the dressing.
- Spread the rocket loosely over a large platter.
- Peel the oranges with a sharp knife, removing the white pith too. Slice them into rounds and shave the Parmesan very thinly.
- For the dressing, whisk together Ölich Olive Oil, balsamic vinegar, a pinch of rock salt and freshly ground pepper.
- Arrange the oranges and Parmesan over the rocket and drizzle with the dressing.
- Scatter over the walnuts and serve straight away.
Slice the oranges directly over the bowl with the dressing. That way every drop of juice ends up in it.
