
Bruschetta with Goat's Ricotta and Figs: Sweet and Tangy
This simple but refined bruschetta recipe brings together the sweetness of ripe figs and the creamy taste of goat's ricotta. Crisp bread, fragrant herbs and caramelised nuts make this dish a real treat. Perfect as a starter or light snack!
Method
- Preheat the oven or grill. Cut the bread into slices about 1 cm thick and toast both sides until golden brown.
- While the bread is toasting, prepare the figs. Simply cut along the stem and halve them.
- Heat a little Ölich Olive Oil in a medium pan. Fry the figs cut side down over a high heat.
- In another pan, toast the nuts with the honey or sugar over a medium heat until golden and caramelised.
- Once the nuts have cooled, break them up roughly.
- Now for the fun part! Spread the warm bread with goat's ricotta and top with rocket, the fried figs and the caramelised nuts.
- Finally, drizzle with a little balsamic glaze and Ölich Olive Oil. A little salt and pepper rounds it all off.
