Olive trees often bear in alternation: a year with a rich harvest is followed by a year with far fewer fruits. Experts call this alternate bearing. After a large harvest the tree needs strength to recover. The following year it forms fewer blossoms.
Weather, pruning and care can soften the swing, but it never disappears completely. That is why harvest volumes in a region vary from year to year. Good olive oil remains a natural product.
