In a hand harvest, the olives are combed off the branches by hand or with small rakes and caught in nets. This takes longer than mechanical harvesting. In return, the fruit stays largely intact. Bruises and cracks are where fermentation and oxidation begin, even before the olive reaches the mill.
Our olives from Edremit are harvested by hand and pressed within 8 hours of harvest. It takes around 7,000 olives to make one litre of Ölich Olive Oil.
