In late spring, usually in May around the Mediterranean, the olive tree blossoms. The flowers are small, creamy white and hang in clusters between the leaves. They are pollinated mainly by the wind.
Only a small share of the blossoms later becomes an olive. The weather during flowering helps decide how rich the harvest will be in autumn. It then takes several more months until the fruit is ripe.
