Pepperiness
You do not feel the pepperiness of olive oil on the tongue but in the throat. It comes mainly from oleocanthal, a polyphenol found only in extra virgin olive oil. In tasting it counts as one of the three positive attributes, alongside fruitiness and bitterness.
Our Ölich Olive Oil is mild on the attack. Only at the end comes a fine peppery finish that lingers briefly in the throat. It never overpowers and works over a salad just as well as in the pan.
