Bitterness
The bitterness in olive oil comes from polyphenols, above all from compounds derived from oleuropein. These substances are found in the olive itself. The fresher and gentler the processing, the more of them remain in the oil. That is why a pleasant bitterness counts as a positive attribute in tasting.
Our Ölich Olive Oil is mild on the attack. The bitterness only shows towards the end, very lightly, together with a fine peppery finish. It never overpowers the salad or the vegetables from the pan.
