Oleocanthal
Oleocanthal is a polyphenol found only in extra virgin olive oil. Researchers described it in more detail in 2005. It stimulates certain receptors in the throat, not on the tongue. That is why you only feel it when you swallow, as a short peppery tingle.
This tingle can appear especially in olive oils rich in polyphenols. In our Ölich Olive Oil it shows at the end as a fine peppery finish that lingers only briefly in the throat. Some people even cough. That is part of it.
