Olive Oil Tasting
Pour a tablespoon of oil into a small glass. Hold it in your hand until the oil is slightly warm. Cover it while you do. Then smell: grassy, fruity, almond? Now take a small sip, draw air in through your teeth and spread the oil around your mouth. Finally, swallow.
Pay attention to three things: fruitiness on the nose, bitterness on the tongue and pepperiness in the throat. Professionals use blue glasses so that the colour does not influence their judgement. The colour says nothing about quality.
