Not every olive is equally suited to everything. Table olives usually have large fruit with plenty of flesh and a small stone. Oil olives are often smaller but have a higher oil content. Many varieties are used for both.
Well known table olives include Kalamata from Greece and Domat from Turkey. For oil, varieties such as Koroneiki, Picual and Memecik are valued. Our Ölich Olive Oil is made from Memecik alone.
