Acidity tells you how many free fatty acids the oil contains. They form when olives are damaged or wait too long before pressing. You cannot taste acidity. It is a lab value and one of the criteria for the grade.
For extra virgin olive oil, the EU allows at most 0.8 per cent, for virgin olive oil 2 per cent. Healthy, hand harvested olives that are pressed quickly give oils with low acidity.
