Oleic acid is a monounsaturated fatty acid and makes up most of olive oil, around 55 to 83 per cent depending on variety and region. It is the reason olive oil is liquid at room temperature and stays stable when heated.
Important: oleic acid has nothing to do with the “acidity” on some labels. That describes the free fatty acids and is a quality marker. The lower it is, the better.
