Like extra virgin oil, virgin olive oil is obtained purely by mechanical means. The limits are less strict, though: the free fatty acid content may be up to 2 per cent. Slight taste defects are allowed in the tasting.
You will find virgin olive oil in shops less often than extra virgin. If you compare two bottles, read carefully. The small word “extra” makes the difference between two grades.
