“PDO” stands for Protected Designation of Origin. With this label, every step from growing to pressing must take place in a defined region. “PGI” stands for Protected Geographical Indication. Here it is enough if part of the production happens in the region.
Both labels say something about origin, not automatically about taste or freshness. For quality it is also worth looking at the grade, the variety and the harvest date.
