The olive tree is adapted to the Mediterranean climate with its long, dry summers. Its leathery leaves carry fine scale hairs on the underside, which give them their silvery sheen and slow down evaporation. Its widely branching roots reach water in deeper layers too.
In great heat the tree reduces its water use and waits. That is why olive trees grow where other fruit trees give up. Rain at the right time still improves the harvest.
