After the olives are crushed, a thick paste forms. During malaxation it is stirred slowly, usually for 20 to 45 minutes. The tiny oil droplets join into larger drops, which are then easier to separate from the water and the fruit solids.
Many aromas also develop at this stage. Temperature and duration help shape the taste. If the paste stays below 27 °C, the oil may be called cold extracted.
