Olive Oil ABC: Which oil is right for me?

We admit it: with so many olive oils on offer, it can be hard at first to work out which one is good. But not any more. Here we show you briefly what to look out for when you want to buy a high-quality olive oil. 

1. Extra virgin olive oil

Quality varies a great deal between the different grades. The highest and most expensive grade is extra virgin olive oil. Extra virgin olive oil is cold-pressed (at no more than 27°C) and unrefined, a natural product made from fresh olives. Its particularly fruity aroma and bright yellow-green colour are the result of gentle processing. It is the only olive oil allowed to carry the top quality grade. Extra virgin olive oil is very versatile and can be used for cooking as well as for salads. Not only in Mediterranean cooking but in many other dishes, extra virgin olive oil is a true all-rounder. 

2. Virgin olive oil

Ordinary virgin olive oil is produced purely by mechanical means, directly from the olives. It contains no chemical solvents and is a pure, good-quality type of olive oil. It has a typical fruity flavour and a green-gold colour. Virgin olive oil is a little cheaper than extra virgin olive oil. 

3. Refined olive oil 

Refined olive oil is produced using heat and chemicals. The oil is extracted with heat, and solvents such as hexane are used in the process. This can create unwanted by-products. Processing leaves refined olive oil without any particular flavour. It is pale yellow with a neutral taste, which is also why it is the cheapest type of olive oil. 

Finding the oil that suits you

As we've seen, not all olive oil is the same. Only the top grade, extra virgin olive oil, is among the finest oils there are. 

If you are looking for a good olive oil, choose an extra virgin olive oil. It is the best grade, and there are many smaller, traditional producers making excellent oils, each with its own character. The best way to find out which one suits you is to taste them.
