Fresh from the mill, olive oil contains fine fruit particles and droplets of water. It is cloudy. Many producers therefore filter the oil before bottling. Others let it rest so that the particles settle.
Unfiltered oil looks rustic and is often sold as especially fresh. The suspended particles can ferment over time, though, and change the taste.
